Colorado Springs’ restaurant menu is expanding with these restaurants projected to open early in 2021:

Birdcall is slated to open in March, adding to their three existing locations in the Denver area. They’ll be taking the place of the former Taco Bueno location just east of Powers on Dublin. Birdcall’s menu includes eleven chicken sandwich variations and five entree salad options.
Nine restaurants (ramen to mac and cheese to ice cream), two bars, and the Rocky Mountain Motorcycle Museum will open in the 28,000-square-foot City Works Eatery at 19 N. Tejon Street sometime in April.

White Pie Pizzeria is expanding from Denver to a new location in downtown Colorado Springs: 330 S. Nevada Ave. Their menu includes a variety of appetizers and unique pizza combinations.
A third Denver-based restaurant, Mici Handcrafted Italian, is taking over the former Smashburger space at 3707 Bloomington Street and will offer fast casual Italian food.
